Pista Plain – Unsalted Pistachios for Cooking and Snacking
Plain here means no salt and no roasting. That matters more than it sounds, because salted pista cannot go into kheer, barfi or a biryani garnish without throwing the whole dish off. Unsalted kernels give you the choice: eat them as they are, roast them yourself, or use them in cooking where the salt would ruin things. The nuts are pale green to ivory with the papery skin intact, which is where the colour comes from when they are chopped into a sweet. Spyran pista plain is sorted for whole kernels, with shell fragments and broken pieces removed.

Pistachios are called pista across India and are among the more expensive dry fruits, largely because the tree bears a full crop only every second year. Most of what reaches the Indian market comes from Iran, the United States or Afghanistan.
Plain pistachios are sold shelled, unsalted and unroasted. Almost everything on a shop shelf is the opposite: salted, roasted and often still in the shell. That version works as a snack and nothing else. Once salt is on the kernel, it cannot be removed, so a pack of salted pista is useless for kheer, shrikhand, kulfi, barfi or a pulao garnish. Anyone cooking with pistachios needs the plain version.
Colour is the quality signal buyers should look at. Good pistachio kernels are pale green through to yellow-green, with a thin purple-tinged skin. Deeper green usually means an Iranian variety, which is prized for the colour it brings to sweets. Dull, greyish or brownish kernels indicate age or poor storage.

How to Use Pista Plain
As a snack:
A handful of around 20 to 25 kernels is a standard serving. Plain pistachios have a mild, sweet taste that most people find lighter than salted ones.
To roast at home:
- Dry roast on a low flame for four to five minutes, stirring constantly.
- Add salt only after roasting, and only if you want it. A light sprinkle while the kernels are still warm makes it stick.
- Cool completely before storing. Trapped steam turns them soft.
In sweets and cooking:
- Chop coarsely and add to kheer, basundi or rabdi in the last two minutes.
- Slice into slivers for garnishing barfi, halwa and kulfi.
- Grind with a little milk for pista barfi and pista kulfi.
- Scatter over biryani and pulao just before serving.
- Fold into shrikhand and hung curd desserts.
Do not add pistachios early in a long cook. Heat dulls the green colour and softens the crunch, which is why they go in at the end.

How to Store Pistachios
Pistachios carry enough oil to turn rancid, so they need more care than almonds.
- Transfer to an airtight container as soon as the pack is opened.
- Refrigerate for regular use. Cold storage genuinely extends the life of high-oil nuts.
- Freeze if buying the 250 g pack and using it slowly. Frozen kernels keep well for months.
- Keep away from strong-smelling foods, since pistachios absorb odours.
- Never store near the stove or in a clear jar on the counter.
At room temperature, plain pistachios hold their flavour for around a month. Refrigerated, closer to five to six months.

Plain pistachios are unsalted and unroasted. They work for cooking, sweets and garnishing, and can be roasted and salted at home whenever you want the snack version.
Salted roasted pistachios work as a snack only. The salt cannot be removed, so they are unusable in kheer, barfi, kulfi or anything sweet.
