Elaichi dana is cardamom with the pod already removed, so what you get is only the black seeds where the aroma actually sits. The pod is fibrous husk that gets discarded anyway, which means a 50 g pack of seeds goes considerably further than 50 g of whole pods.     Elaichi dana means cardamom seeds, sold separated from the green pod that encases them. Green cardamom grows mainly in Kerala, Karnataka and Tamil Nadu, and India is among the largest producers in the world.

    The pod itself carries very little flavour. It is a light, fibrous shell, and its job is to protect the seeds inside. Almost every recipe that calls for elaichi wants those seeds, either crushed with the pod discarded, or ground into a powder. Buying dana skips that step.

    That has a real effect on quantity. Roughly a quarter to a third of a whole cardamom pod by weight is the husk. Fifty grams of seeds therefore delivers meaningfully more usable spice than fifty grams of pods, which is worth knowing when comparing elaichi dana price against whole cardamom.

    The trade-off is shelf life. Sealed inside the pod, cardamom seeds hold their aroma longer. Once separated, the volatile oils have more exposed surface and begin escaping sooner. This does not make loose seeds a poor choice, it just means they should be stored properly and used within a reasonable period rather than left open in a masala dabba for two years.

    Colour is the freshness signal. Good cardamom seeds are dark brown to near black, slightly sticky to the touch and intensely aromatic when crushed. Pale, dry, greyish seeds that smell faint have lost most of their oil.

    How to Use Elaichi Dana

    Crushed fresh:

    Crush a pinch of seeds in a mortar just before adding to a dish.

    • Crushing releases the aroma immediately, so do it at the point of use rather than in advance.
    • A quarter teaspoon of crushed seeds is enough for a dish serving four.

    In chai:

    • Crush four to five seeds and add to the water while the tea boils.
    • For chai masala, grind the seeds with dry ginger, laung and dalchini and store the blend.

    In sweets:

    • Grind to a fine powder and add to kheer, halwa, barfi or ladoo at the end.
    • Cardamom loses aroma with prolonged heat, so add it late rather than early.

    In a masala blend:

    • Add the seeds directly to the grinder with the other spices. No dry roasting needed, since cardamom scorches easily and loses its character.

    Grind only what is needed. Ground cardamom fades faster than almost any other ground spice, usually within two to three weeks.

    How to Store Elaichi Dana

    Loose cardamom seeds need more careful storage than whole pods, since the protective husk is gone.

    • Do not store above the stove. Heat drives off the volatile oils that carry the aroma.
    • Keep the container closed between uses rather than leaving it open in a masala dabba.

    Stored properly, elaichi dana holds its strength for six to eight months. The test is immediate: open the container. If the sweet aroma reaches you at once, the spice is good. If you have to bring it close to smell anything, it has faded.

    Never store ground cardamom. Grind at the point of use.

    Whole green elaichi keeps the seeds sealed in the pod, which preserves aroma for longer. Best for occasional use, for dishes where a whole pod goes into the pot, and for buying in larger quantities to store.
