Ingredients:

For Cauliflower Tikka:

  • 1 medium head of cauliflower (cut into florets)
  • ¾ cup thick yoghurt
  • 1 tbsp ginger-garlic paste
  • 1 tspSpyran Turmeric Powder
  • 1 tspSpyran Red Chilli Powder
  • 1½ tspSpyran Coriander Powder
  • 1 tspSpyran Cumin Powder
  • 1 tspSpyran Garam Masala
  • Spyran Saltto taste
  • 1 tbsp lemon juice
  • 2 tbsp oil

For Tikka Masala Gravy:

  • 2 tbsp oil or ghee
  • 1 tspSpyran cumin
  • 1Spyran bay leaf
  • 1 medium onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 large tomatoes, pureed
  • 1 tspSpyran Red Chilli Powder
  • 1 tspSpyran Turmeric Powder
  • 1½ tspSpyran Coriander Powder
  • 1 tspSpyran Garam Masala
  • ¼ cup cashew paste or cream
  • Spyran Saltto taste
  • Fresh coriander to garnish

For Garlic Naan:

  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • Spyran Saltto taste
  • 2 tbsp yoghurt
  • ¾ cup warm milk
  • 1 tbsp oil
  • 3-4 garlic cloves (finely minced)
  • Butter for brushing
  • Chopped coriander

Instructions:

  • Step 1: Prepare the Cauliflower Tikka

In a large bowl, whisk together yoghurt, ginger-garlic paste, lemon juice, and all Spyran masalas along with salt. Add cauliflower florets and coat evenly. Cover and marinate for at least 30 minutes. Roast in an oven at 200°C for 20–25 minutes or sauté in a pan until charred and slightly crisp.

  • Step 2: Make the Tikka Masala Gravy

Heat oil in a pan, add cumin seeds and bay leaf. Sauté onions until golden, then add ginger-garlic paste and cook till raw smell disappears. Add tomato puree and cook until oil separates. Add Spyran Red Chilli Powder, Turmeric, Coriander Powder, and salt. Stir in cashew paste and a splash of water to adjust consistency. Simmer for 5 minutes. Add roasted cauliflower and Spyran Garam Masala. Cook for another 5 minutes and garnish with fresh coriander.

  • Step 3: Prepare Garlic Naan

In a mixing bowl, combine flour, baking powder, baking soda, and salt. Add yoghurt, milk, and oil. Knead into a soft dough and let it rest for an hour. Divide into balls, roll each out, sprinkle with garlic and coriander, and press lightly. Cook on a hot tawa or skillet until bubbles appear, flip and cook the other side. Brush with butter.
