Ingredients:

For Rava Uttapam:

  • 1 cup semolina (rava)
  • 1 cup yogurt
  • 1/2 cup water
  • 1/2 tsp Spyran Salt
  • 1/2 tsp Spyran Cumin Seeds
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 small bell pepper, finely chopped
  • 1 green chilli, finely chopped
  • 2 tbsp fresh coriander leaves, chopped
  • Oil for cooking

For Sambar:

  • 1 cup toor dal (pigeon peas)
  • 1 small onion, chopped
  • 1 small tomato, chopped
  • 1 carrot, chopped
  • 1/2 cup pumpkin, chopped
  • 1/2 cup eggplant, chopped
  • 2 tbsp Spyran Idli Sambar Masala
  • 1/2 tsp Spyran Turmeric Powder
  • 1/2 tsp Spyran Red Chili Powder
  • 1/2 tsp Spyran Mustard Seeds
  • 1/2 tsp Spyran Cumin Seeds
  • 2 dry red chillies
  • 1 sprig curry leaves
  • 2 tbsp tamarind pulp
  • 2 tbsp oil
  • Spyran Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

For Rava Uttapam:

  • In a bowl, mix semolina and yoghurt.
  • Add water gradually to achieve a thick, pancake-like batter.
  • Add Spyran Salt and Spyran Cumin Seeds to the batter. Let it rest for 15-20 minutes.
  • Mix the chopped onions, tomatoes, bell peppers, green chilli, and coriander leaves in a bowl.
  • Heat a non-stick pan and drizzle some oil.
  • Pour a ladleful of batter onto the pan and spread it slightly.
  • Sprinkle the vegetable mixture on top and press gently.
  • Cook on medium heat until the base is golden brown, then flip and cook the other side until done.
  • Repeat with the remaining batter.

For Sambar:

  • Rinse toor dal and pressure cook with 3 cups of water, Spyran Turmeric Powder, and a pinch of Spyran Salt until soft. Mash the cooked dal and set aside.
  • In a large pan, heat oil and add Spyran Mustard Seeds, Spyran Cumin Seeds, dry red chillies, and curry leaves.
  • Add the chopped onions and sauté until translucent.
  • Add tomatoes, carrots, pumpkin, and eggplant. Sauté for a few minutes.
  • Add the mashed dal to the pan along with Spyran Idli Sambar Masala, Spyran Red Chili Powder, and tamarind pulp.
  • Add water to achieve the desired consistency and bring to a boil.
  • Simmer for 15-20 minutes until the vegetables are cooked and the flavours are well combined.
