    Green elaichi, called choti elaichi in Hindi and green cardamom in English, is grown mainly across Kerala, Karnataka and Tamil Nadu. India is one of the largest producers in the world, and cardamom is among the most valuable spices by weight anywhere.

    The pod is the reason to buy whole. Inside each green husk sit fifteen to twenty small black seeds, and the aromatic oils are held in those seeds. The pod acts as a natural seal. Break it open and the aroma releases at once, which is why cardamom smells so much stronger when crushed fresh than when bought pre-ground.

    That seal is also what makes whole pods worth stocking in quantity. Ground cardamom fades within two to three weeks. Loose seeds hold for six to eight months. Whole pods keep their strength for well over a year, which is why the larger packs make sense here in a way they would not for a ground spice.

    Colour is the first quality signal. Good pods are a clear light green, plump and firm, with the ridged husk intact. Pale or yellowing pods have been stored badly or sat too long, and bleached-looking pods have often been treated to improve appearance. Squeeze a pod between the fingers. It should feel full, not hollow.

    How to Use Green Elaichi

    In chai:

    • Crush two to three pods lightly with the flat of a knife or between the palms.
    • Add to the water while the tea boils, husk and all.
    • Elaichi for tea works best crushed rather than whole, since a sealed pod releases very little.

    In gravies and rice:

    • Add two to three whole pods to hot ghee at the start of a biryani or pulao.
    • Leave them in. They soften during cooking and are usually left in the dish.

    In sweets:

    • Open the pods, discard the husk and crush the seeds in a mortar.
    • Add the powder at the end of cooking, since prolonged heat dulls the aroma.
    • Roughly ten to twelve pods yield about a quarter teaspoon of seed powder.

    In a masala blend:

    • Add whole pods or seeds directly to the grinder with the other spices.
    • Do not dry roast cardamom. It scorches easily and loses its character.

    Crush or open pods only at the point of use. Once opened, the aroma starts escaping within hours.

    How to Store Green Elaichi

    Whole pods are among the easiest spices to store well, since the husk does most of the work

    • Keep the pods in an airtight container in a cool, dry place away from sunlight.
    • Do not store above the stove. Heat and steam fade the green colour and the aroma with it.
    • Keep pods whole until the moment of use.
    • Buy the larger packs only if storage is airtight, since the advantage of whole pods disappears in a loosely closed jar.

    Stored properly, whole green elaichi holds its strength for well over a year. The colour tells you as much as the smell. Bright green pods are fresh, while pods fading toward yellow-brown have lost aroma.

    Never store ground cardamom. Grind at the point of use.

    Whole Elaichi or Elaichi Dana: Which One to Buy

    Whole green elaichi keeps the seeds sealed in the pod, holding aroma for over a year. Best for chai, for dishes where a whole pod goes into the pot, and for buying in larger quantities to store.

    Elaichi dana is seeds with the pod already removed. More usable spice per gram and no splitting pods before cooking, though it fades faster once opened. Best for regular use in sweets and masala blends.
