Dry roasted means no oil goes into the pan. The kernels are roasted on heat alone until the natural oils inside come forward, which gives a cleaner crunch and none of the greasy film that oil-fried nuts leaves on the fingers. Salt goes on afterwards, judged so the pistachio itself still comes through. The kernels stay pale green under a light golden roast, and they snap rather than bend. Spyran salted pista is sorted for whole kernels, with shell fragments and broken pieces removed.

    Pistachios are called pista across India, and salted roasted pista is how most people eat them, whether alongside tea, on a flight, or from a bowl on the table.

    There are two ways to roast a nut, and they produce different results. Oil roasting cooks the kernel in hot oil, which is faster and adds outside fat to a nut that already carries plenty of its own. Dry roasting uses heat alone, drawing out the pistachio\\\\\\\'s natural oils. The nut stays lighter, the crunch is crisper, and the taste of the pistachio remains rather than being flattened by frying oil.

    Salt is where sellers differ most. Heavy salting is often used to cover kernels that are not particularly fresh, since salt masks the flat, slightly stale note that old nuts carry. A well-salted pistachio should let you taste the nut first and the salt second. If salt is the only thing coming through, that is a signal worth noticing.

    Colour tells you about the pistachio underneath. Good kernels stay pale green to yellow-green even after roasting, with the thin purple-tinged skin visible. Deep browning means the roast went too far, and with it goes both the colour and the delicate taste people pay for in pistachios.

    How to Use Salted Pista

    As a snack:

    A handful of 20 to 25 kernels is a standard serving. Salted nuts are easy to keep eating without noticing, so portioning into a small bowl works better than eating from the pack.

    In cooking:

    Salted pistachios work in savoury dishes only. Crush over salads, poha, upma, biryani or stir-fries where the salt is welcome.

    For kheer, barfi, kulfi, shrikhand or any sweet, use plain unsalted pista instead. The salt cannot be removed and will show through in a sweet dish.

    To restore crunch:

    If the kernels soften after the pack has been open a while, dry roast on a low flame for two minutes and cool completely before storing. Do not add oil.

    How to Store Salted Pistachios

    Roasted pistachios lose crunch through moisture, and their oil content means they can eventually turn rancid.

    • Transfer to an airtight container as soon as the pack is opened.
    • Keep in a cool, dry place away from sunlight and away from the stove.
    • Refrigerate during the monsoon or in humid coastal weather.
    • Freeze the 500 g pack if it will be used slowly. Pistachios freeze well.
    • Keep away from strong-smelling foods, since nuts absorb odours.

    At room temperature, roasted pistachios stay crisp for about two months. Refrigerated, closer to five to six months.

    Signs they have gone off: a sharp or paint-like smell, a bitter aftertaste, or kernels that have darkened noticeably.

    Salted or Plain: Which One to Buy

    Plain pista is unsalted and unroasted. It works for sweets, kheer, barfi, kulfi and garnishing, and it can be roasted and salted at home whenever the snack version is wanted.
