    Black rajma, also called kala rajma or black kidney bean, is a darker cousin of the red rajma used in North Indian rajma chawal. It is grown widely in Himachal Pradesh, Uttarakhand and parts of Jammu, where colder growing conditions produce a denser, more flavourful bean.

    The difference from red rajma is practical. Black rajma has a firmer skin, so it survives a longer simmer without splitting open. The inside cooks soft and creamy while the bean itself stays whole. This makes it a better fit for gravies that need to cook down slowly, and for dishes where the beans should stay distinct rather than dissolve into the sauce.

    Colour behaviour is worth knowing in advance. The soaking water turns dark, and the cooked gravy takes on a deeper brown than red rajma produces. This is natural pigment leaching from the skin, not a sign of adulteration.

    How to Cook Black Rajma

    Rajma needs an unhurried soak. Skipping it is the single most common reason beans stay hard.

    • Rinse two to three times until the water runs clear.
    • Soak for at least 8 hours or overnight in plenty of water. The beans should nearly double in size.
    • Drain the soaking water and rinse once more. This reduces the compounds that cause bloating.
    • Pressure cook with fresh water covering the beans by two inches, along with a pinch of haldi.
    • Cook for 6 to 8 whistles on medium flame, then let the pressure release on its own. The beans should crush easily between two fingers.
    • Add salt and tomato only after the beans are soft. Both slow down the cooking if added early.

    Kidney beans must be cooked thoroughly and should never be eaten undercooked. If a bean still feels firm at the centre, give it two more whistles.

A few dried red chillies or neem leaves in the container work as a traditional pest deterrent.
