How to Cook Unpolished Toor Dal
Unpolished dal needs slightly more time in the cooker but less time at the sink.
- Rinse once or twice. Without an oil coating, the water runs clear quickly.
- Soak for 30 minutes. This matters more here than with polished dal, since the intact outer layer takes longer to absorb water.
- Pressure cook with roughly 1 cup dal to 3 cups water, along with a pinch of haldi.
- Cook for 5 to 6 whistles on medium flame, then let the pressure release on its own.
- Mash lightly with a ladle, add salt, then finish with a tadka of jeera, hing, lahsun and red chilli.
Adding salt at the start slows down how the grain softens, so keep it for the end. Skipping the soak adds two more whistles to the cooking time.

How to Store Unpolished Toor Dal
Transfer the dal to a clean, airtight container after opening. Keep it in a cool, dry place away from sunlight and away from the stove, since heat and steam shorten shelf life. Without an oil coating, unpolished dal is slightly more open to moisture and pests, so an airtight seal matters more here. A few dried red chillies or neem leaves in the container work as a traditional deterrent. Buy in quantities that will be used within two to three months.
