Ingredients:

  • 2 cups dried Chhole (Chhole)
  • 3-4 cups water for soaking
  • 2-3 tablespoons Spyran Chhole Masala
  • 2 tablespoons Spyran garam masala
  • 2 large onions, finely chopped
  • 3 large tomatoes, finely chopped
  • 4-5 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chillies, finely chopped
  • 2 tablespoons cooking oil or ghee
  • 1 teaspoon Spyran cumin seeds
  • 1 teaspoon Spyran turmeric powder
  • Spyran salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  • Soak Chhole:Rinse the dried Chhole thoroughly and soak them in water overnight or for at least 8 hours. Drain the water before using.
  • Pressure Cook Chhole:In a pressure cooker, add the soaked Chhole along with fresh water and a pinch of Spyran salt. Pressure cook until Chhole becomes tender and can be easily mashed with fingers. Set aside.
  • Prepare Spice Paste:In a small bowl, mix Spyran Chhole Masala with a little water to form a paste. Set aside.

Cooking Chhole:

  • Heat oil or ghee in a large pan or kadhai over medium heat. Add Spyran cumin seeds and let them crackle.
  • Add chopped onions and sauté until they turn golden brown.
  • Add minced garlic, ginger, and green chillies. Sauté for another 2-3 minutes until the raw smell disappears.
