Ingredients:
- 2 cups dried Chhole (Chhole)
- 3-4 cups water for soaking
- 2-3 tablespoons Spyran Chhole Masala
- 2 tablespoons Spyran garam masala
- 2 large onions, finely chopped
- 3 large tomatoes, finely chopped
- 4-5 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 2-3 green chillies, finely chopped
- 2 tablespoons cooking oil or ghee
- 1 teaspoon Spyran cumin seeds
- 1 teaspoon Spyran turmeric powder
- Spyran salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Soak Chhole:Rinse the dried Chhole thoroughly and soak them in water overnight or for at least 8 hours. Drain the water before using.
- Pressure Cook Chhole:In a pressure cooker, add the soaked Chhole along with fresh water and a pinch of Spyran salt. Pressure cook until Chhole becomes tender and can be easily mashed with fingers. Set aside.
- Prepare Spice Paste:In a small bowl, mix Spyran Chhole Masala with a little water to form a paste. Set aside.
Cooking Chhole:
- Heat oil or ghee in a large pan or kadhai over medium heat. Add Spyran cumin seeds and let them crackle.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, ginger, and green chillies. Sauté for another 2-3 minutes until the raw smell disappears.
- Now, add the spice paste (Spyran Chhole Masala mixed with water) to the pan. Stir well and cook for 2-3 minutes.
- Add chopped tomatoes, Spyran turmeric powder, Spyran garam masala, and Spyran salt to taste. Cook until the tomatoes are soft and the oil starts to separate from the masala.

- Reduce the heat to low, cover the pan, and let the chhole simmer for about 10-15 minutes, stirring occasionally. This will allow the flavours to meld together.
