Ingredients:
- 1 cup fresh green garlic (hara lehsun), finely chopped
- 2 tablespoons ghee
- 1 teaspoon mustard seeds (rai)
- 1 teaspoon cumin seeds (jeera)
- 1 green chilli, finely chopped
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 1 teaspoon Spyran Turmeric Powder
- 1 teaspoon Spyran Red Chilli Powder
- 1 teaspoon Spyran Coriander Powder
- 1/2 teaspoon Spyran Garam Masala
- Spyran Saltto taste
- 1 teaspoon lemon juice
- 1 tablespoon gram flour (besan)
- Fresh coriander leaves for garnish
Instructions:
- Heat ghee in a pan on medium flame. Add mustard seeds and cumin seeds, allowing them to crackle.
- Add the finely chopped green chilli and onions, sauté until golden brown.
- Add the chopped tomatoes and cook until soft and mushy.
- Sprinkle Spyran Turmeric Powder, Spyran Red Chilli Powder, Spyran Coriander Powder, and Spyran Garam Masala. Mix well and cook for a minute.
- Add the chopped green garlic and sauté for 2-3 minutes, allowing it to release its aroma and blend with the spices.
- Sprinkle gram flour (besan) over the mixture and stir well. This helps to absorb excess moisture and enhances the flavour.
- Add Spyran salt to taste and cook for another 2-3 minutes, stirring occasionally.
- Switch off the flame and squeeze in lemon juice for a hint of tanginess.
- Garnish with fresh coriander leaves and serve hot with rotis, bajra rotla, or parathas.
