Ingredients:
For the Koftas:
- 2 cups grated lauki (bottle gourd)
- ½ teaspoon Spyran Salt
- ½ teaspoon Spyran Turmeric Powder
- ½ teaspoon Spyran Red Chilli Powder
- ½ teaspoon Spyran Coriander Powder
- ¼ teaspoon Spyran Garam Masala
- 3 tablespoons gram flour (besan)
- ½ teaspoon grated ginger
- 2 tablespoons chopped coriander leaves
- Oil for frying
For the Curry:
- 2 tablespoons oil
- 1 teaspoon Spyran cumin seeds
- 1 onion (finely chopped)
- 2 tomatoes (pureed)
- 1 teaspoon Spyran Turmeric Powder
- 1 teaspoon Spyran Red Chilli Powder
- 1 teaspoon Spyran Coriander Powder
- ½ teaspoon Spyran Garam Masala
- ½ teaspoon Spyran Salt (adjust as per taste)
- 1 teaspoon ginger-garlic paste
- ½ cup curd (whisked)
- 1 cup water
- 2 tablespoons fresh cream (optional)
- Fresh coriander leaves for garnish
Instructions:
Step 1: Prepare the Koftas
- Squeeze out excess water from the grated lauki and transfer it to a mixing bowl.
- Add Spyran Salt, Spyran Turmeric Powder, Spyran Red Chilli Powder, Spyran Coriander Powder, Spyran Garam Masala, grated ginger, gram flour, and chopped coriander leaves.
- Mix well to form a thick mixture. If needed, add a little more gram flour to bind the mixture.
- Shape the mixture into small balls and deep fry them until golden brown. Remove and keep aside.
Step 2: Prepare the Curry
- Heat oil in a pan and add Spyran cumin seeds. Let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook for a minute until fragrant.
- Pour in the tomato puree and cook until the oil separates from the masala.
- Add Spyran Turmeric Powder, Spyran Red Chilli Powder, Spyran Coriander Powder, and Spyran Salt. Mix well.
- Reduce the heat and add whisked curd, stirring continuously to avoid curdling.
- Pour in water, bring to a boil, and let the curry simmer for 5 minutes.
- Gently place the fried koftas into the gravy and cook for another 2 minutes.
- Sprinkle Spyran Garam Masala and add fresh cream for extra richness.
- Garnish with fresh coriander leaves.
