Ingredients:
For the Couscous and Chickpea Patties:
- 1 cup couscous
- 1 cup boiling water
- 1½ cups cooked chickpeas (or canned, rinsed and drained)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp Spyran Cumin Powder
- 1 tsp Spyran Coriander Powder
- ½ tsp Spyran Garam Masala
- ½ tsp Spyran Kashmiri Chilli Powder (adjust to taste)
- ¼ tsp Spyran Turmeric Powder
- Spyran Salt to taste
- 2 tbsp chopped fresh coriander
- 2 tbsp breadcrumbs (for binding)
- 1 tbsp lemon juice
- Oil for shallow frying
For the Carrot Salad:
- 2 large carrots, grated
- ½ tsp Spyran Black Salt
- ½ tsp Spyran Roasted Cumin Powder
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp honey
- 1 tbsp chopped fresh mint or coriander
Instructions:
- Prepare the couscous by placing it in a bowl and pouring boiling water over it. Cover and let it sit for 5-10 minutes, then fluff with a fork and allow it to cool.
- In a mixing bowl, mash the chickpeas lightly with a fork. Add the cooked couscous, chopped onion, garlic, Spyran Cumin Powder, Spyran Coriander Powder, Spyran Garam Masala, Spyran Kashmiri Chilli Powder, Spyran Turmeric Powder, Spyran salt, lemon juice, fresh coriander, and breadcrumbs. Mix until well combined and shape into medium-sized patties.
- Heat a non-stick pan with a little oil and shallow fry the patties on medium heat for about 3–4 minutes on each side, or until golden and crisp.
- For the salad, whisk together lemon juice, olive oil, honey, Spyran black salt, and roasted cumin powder. Pour over the grated carrots and toss with fresh mint or coriander.
